Supa' Juicy 
Bacon And Cheese Stuffed Burgers

Prep time: 20 minutes
Yield: 4 servings

  • 1 lb 10/90 ground beef
  • 1 egg
  • 1 medium white onion
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup A1 steak sauce plus and extra sauce to baste
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 slices of bacon (turkey bacon, if you prefer)
  • 2 slices Colby Jack cheese (or cheese of choice) cut in half


In a large mixing bowl combine the following ingredients: ground beef, egg, onions, breadcrumbs, a-1 sauce, salt and pepper.

Make eight very thin patties (you will be using two patties per burger). Stack patties, placing waxed paper between each patty. Cover and place in the refrigerator- while working on the next step.

  • refrigerator time is important to this recipe- approximately 20-30 minutes is needed to meld flavors.
  • You could easily prepare a day ahead. Placing the (covered) completely prepared burgers in the refrigerator until ready to grill.
Place bacon on a microwave safe dish and cover with paper towel. Place in microwave 4-7 minutes. Cook the bacon until translucent. Check the bacon halfway through the cooking process, to insure you do not over cook the bacon.  Remove from microwave and place on paper towels, blot to remove excess oil. Next, fold cheese small enough to place on the end one piece of bacon. Roll the Colby Jack cheese inside the bacon. Proceed until all bacon/cheese is rolled.

Remove patties from the refrigerator.

Time to assemble the burgers!
Take one patty, one bacon wrap, and place wrap in the middle of the first patty. Next, take one more patty and place on top. To seal the edges : Press edges with fingers or press the two patties together, while shaping with your hands (preferred method).

Continue until all 4 patties are made.

With a basting brush, brush the outside of hamburger patties with A-1 sauce, prior to placing on grill.  Continue basting with A-1 sauce throughout the cooking process.
Grill over medium heat, until a meat thermometer, placed inside, reaches 160 degrees and juices run clear.

Crockpot Pizza

Crockpot Pizza
1-12 oz package mini lasagne noodles or other noodles you like
1.5-2 lbs hamburger and/or sausage
1 chopped onion
1 chopped green pepper
1 package pepperoni
1 can mushrooms
2-14 oz jars of spaghetti sauce
1-14 oz jar pizza sauce
1-8 oz package shredded cheddar cheese
1-8 oz package shredded mozerella cheese
Cook noodles normally. Brown meat and drain grease. Add chopped onion, pepper, pepperoni, mushrooms and all sauces. Simmer 30 minutes. Layer noodles, meat sauce mixture and cheeses in your crockpot. Repeat layers. Top with extra pepperoni.
Cook on low 2 hrs or if you want this in your oven 350 for 30 minutes. Serves 10-12.

Taco Soup

Taco Soup

1 1/2 lbs. ground beef.
1 Large white onion chopped
2 (16 oz.) cans pinto beans, drained
2 (16 oz.) cans kidney beans, drained
2 (16 oz.) cans hominy, drained
2 (16 oz.) cans diced tomatoes, undrained
1 Pkg. taco seasoning (El Paso)
1 Pkg. Hidden Valley Ranch Original (dry)
1 Can tomato paste
1 Small can chopped chilies
2 Cans chicken broth

-Toppings-
Grated sharp cheddar cheese
Frito's
Sour Cream
Cook ground beef with the chopped onions in a skillet. Drain
Add beef, 2 cans chicken broth, tomato paste, and dry ingredients to a LARGE pot. Stir until well mixed.
Add the rest of the canned (drained) items. Cook, stirring occasionally, over medium/low heat until hot. (30-45 min.)
Serve with your favorite toppings--Enjoy!
Optional: Crockpot- Cook on LOW 6-8 hours.

Salsa Beef Stew

Salsa Beef Stew
Ingredients
1 1/2 pound(s) lean ground beef
1 large onion, chopped
3 tablespoon(s) chili powder
1 tablespoon(s) olive oil
1 carrot, chopped
1 jar(s) (16 ounces) mild salsa
1 can(s) (14 to 14 1/2 ounces) chicken broth (1 3/4 cups)
1 can(s) (15 to 19 ounces) no-salt-added black beans, rinsed and drained
1 can(s) (11 ounces) no-salt-added whole-kernel corn, drained
1 can(s) (14 1/2 ounces) diced tomatoes in puree
1/2 cup(s) loosely packed fresh cilantro leaves

Directions
1.Heat nonstick 12-inch skillet over medium-high heat until very hot but not smoking. Add ground beef and half of onion and cook 8 minutes or until liquid evaporates and beef is browned, stirring occasionally to break up beef. Stir in chili powder and cook 2 minutes.
2.Meanwhile, in 5- to 6-quart Dutch oven, heat oil over medium-high heat. Add carrot and remaining onion, and cook 5 minutes or until golden, stirring occasionally. Stir in salsa, broth, beans, corn, and tomatoes with their juice; cook 5 minutes, stirring occasionally.
3.Stir beef mixture into bean mixture; heat through. Sprinkle with cilantro to serve
